Blueberry French Toast

Oven-Baked Blueberry French Toast

(Recipe from “Cider Beans, Wild Greens, and Dandelion Jelly”)


2 (8-ounce) packages cream cheese, at room temperature

½ cup sugar

2 teaspoons vanilla extract

1 tsp ground cinnamon

2 large eggs

1-1/2 cups milk

10 slices French bread, ¾ inch thick

2 cups fresh blueberries

Maple syrup, for serving

Confectioner’s sugar, for serving


  1.  PREHEAT oven to 350o and lightly grease a 9 x 13-inch baking dish.
  2. Beat the cream cheese, sugar, vanilla and cinnamon in a large bowl until well blended.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. Add the milk and mix well. 
  5. ARRANGE the bread in the prepared baking dish and spread the blueberries on top of bread.
  6. Pour the cream cheese mixture over the bread.
  7. Let stand for at least 15 minutes before baking (or cover the pan and refrigerate overnight)
  8. Bake for 40-45 minutes until golden brown.
  9. Serve with maple syrup and confectioner’s sugar
